Posole – or hominy – is made by removing the outer layer of corn kernels and then drying them. The posole is then soaked and cooked (traditionally with cubed pork) until tender and the kernels have “bloomed”. SF Season's Family Recipe: Soak posole overnight in water with 1 Tbs of salt added. Rinse & place in sauce pan with 1 Tbs sea salt. Boil for 2 hours. Add i pound of cubed pork or beef, 1 tsp fresh minced garlic, 1/2 tsp SF Seasons Six Seasonings (or oregano), 1/2 cup SF Seasons Red Chile Sauce (or 1 Tbs red chile powder).
