Winemaker Description The harvested grapes are carefully sorted in the winery. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily pigeage, warm maceration. Aged for 12 months in oak barrels, of which 1/3 new, malolactic fermentation in barrels, then assembly in stainless steel tanks for 3 months. Light filtration to bring more clarity and aromatic purity. Tasting Notes: Ruby-purple color with mauve gleams, aroma of blackberries, redcurrant, cherry stone. A feline and wild evolution is not uncommon over time. Orientation towards leather, chocolate, pepper. A wine to be allowed to age a little so that it opens fully. Wine for laying down.
