The Mexican Connection: Post-NAFTA Realities In 1995, IATP embarked on a transformative journey to Mexico’s Chiapas region. They listened to farmers, surveyed the landscape, and discovered a group of passionate coffee growers. These local farmers faced challenges—market price instability, unfair wages, and lack of interest from coffee importers. IATP decided to take action. In 1996, the first shipment of coffee from Chiapas arrived in Minneapolis. Peace Coffee was born—a for-profit entity wholly owned by IATP.
