This Boning Knife was a custom order. The customer was looking for a knife with some flexibility in the blade for trimming meat in preparation of smoking. This knife was forged from 52100 High Carbon Steel. The handle was an ergonomic shape with some hand protection built in. The handle was made from stabilized Bubinga with a walnut and bone accent - a clever choice for a boning knife.
