The finish is soft and warm, with subtle hints of pepper and tobacco. History: This collection embodies the innovative spirit of E.H. Taylor, a visionary in bourbon production. In 1869, Taylor acquired a small distillery in Frankfort, Kentucky, renaming it The Old Fire Copper Distillery. He modernized the plant with copper fermentation tanks, new grain grinding equipment, and unique columnar stills. Taylor was a pioneer, implementing aging whiskey in climate-controlled Rick houses, rather than adding sweetening agents like other distilleries of his time. In 1897, Taylor's collaboration with Treasury Secretary John G. Carlisle led to the Bottled-In-Bond Act. This Act mandated that spirits labeled as "Bonded" or "Bottled-in-Bond" be the product of one distiller, one distillery, during one distillation season. These spirits were supervised by the U.S. government for at least four years and bottled at a minimum of 100 proof in federally bonded warehouses. This collection, with its hand-selected barrels and direct-from-barrel bottling at over 125 proof, harks back to the pre-Prohibition era under Edmund Haynes Taylor, Jr.'s ownership of Buffalo Trace Distillery.
