This 100% Sauvignon Blanc is grown on black sandy soil overlying petrified schist. Whole bunches are placed in a 2400L wooden fermenter and then topped with free-run juice until the fermenter is full. The fermenter is sealed and the wine undergoes carbonic ferment and is aged for 4 months on the macerated whole bunches. Made without added sulphites.
