Harvesting is done by hand. Grapes macerate whole-cluster, and after the stomping, the musts ferment one after another as they are added, lengthening the whole process of fermentation, which is completed in the bottle, resting with its fine lees for a minimum of 10 months. Native yeasts are used for fermentation, and no sulfur is added.  Partida Creus is a small traditional winery that produces a very limited quantity of wines made with organically grown grapes.
