We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word, so now the beer style is officially "California Common." This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be. Fermentation temperatures of 65 to 72 degrees are ideal. This Ultimate version has more of everything - more malt extract for greater body & higher alcohol content, and more hops.
