This classic Tuscan extra virgin olive oil from the Capezzana Estate blends four typical olive cultivars: Frantoio, Leccino, Moraiolo, and Pendolino. The olives are pressed within 24 hours of harvest in a modern, technically innovative oil mill that extracts the ultra-bright green liquid by gentle centrifugation, giving it a remarkably low oleic acid (rarely exceeding 0.2%) due to its unique processing. The low temperature - rapid process contribute to the oil’s rich and elegant aromas typical of the Carmignano region with its notes of green almond, verbena, and chamomile. On the palate the flavors and texture are very clean, redolent of mild, delicate herbs such as fennel fronds, dill, and watercress. The oil is left to decant in the historic Capezzana orciaia, adjacent to the mill, according to ancient artisan traditions that produce a beautifully unfiltered, smooth, and well-balanced oil that doesn’t require a second centrifugation.
