TOYMAKER - Christmas Blend (Medium)
Celebrate the holiday season with Toymaker! We wanted this coffee to be fun and a little different this year. To accomplish this, we blended a washed Sumatran coffee with a natural processed, anaerobic coffee from Honduras! The result produces punchy flavors of chocolate and deep fruit (similar to a red wine). Here is some more information from the Honduras Farm: Maria Mancia owns Las Palmeras, a 7.8 hectare farm over 40,000 Parainema trees. After harvest, the coffee is immediately dry fermented anaerobically (sealed containers with no oxogen), breaking down the mucilage slowly. A brix reading is taken after 100 hours of fermenting to measure and record sugar content. The coffee is then dried for a month, starting on a patio and finishing in a solar dryer. The slow fermentation and drying accentuate the sweetness and acidity (fruitiness) of the coffee she produces.
