Notes from the Winemaker: Winemaker: Thomas Rivers Brown The lots for Hestan Vineyard Cabernet Sauvignon are kept separate throughout winemaking to retain individual block and varietal characters. Small capacity fermentation tanks, carefully timed pump-overs and punch-downs, a mix of native and cultured yeasts, the finest French cooperage and extended aging result in a wine noted for its deep flavor and velvety tannins. On the nose, cherry pie, bright candied raspberry, cranberry and cassis. The palate opens with notes of baked cherry with a hint of red currant and vanilla. The tannins are supple yet firm. Can age for 12-20 years.
