Instead of brining our Morrell Moon "Gouda style" cheese in a water-based salt-brine, we submerge the cheese in a brine made of beer or wine lees for 3 days. Throughout aging, the wheels are washed with their specific brine. Campfire Moon This cheese features Rauchbier from Diamondback Brewing Company called “Canadian Campfire”. They used a maple smoked malt to imbue the beer with a smoky flavor. Mountaintop Moon In collaboration with the Black Ankle Vineyard in Mt. Airy, our cheese makers brined our Morrell Moon in Chardonnay wine lees giving it a lovely floral-wine flavor. $23/lbs Sold in 1/2 pound pieces.
