Instead of brining our Morrell Moon "Gouda style" cheese in a water-based salt-brine, we submerge the cheese in a brine made of beer or wine lees for 3 days. Throughout aging, the wheels are washed with their specific brine. $23/lbs Sold in 1/2 pound pieces.
