We stole this idea from a restaurant that asked us to custom grind it for them and it totally makes sense! To our standard thick grind ground beef, we add 10% ground beef heart. The heart is full of beefy flavor and it's incredibly lean - and not to mention nutritious! This is our leanest ground beef and you would never even know there's heart mixed in.
