Jenning Cox is generally credited with creating the original daiquiri. One of the first miners on the island after the Spanish American War, Jennings ran out of gin - his favored spirit, while entertaining. The easiest replacement to find on the island was rum, to which he added lemons, sugar, mineral water, and ice.
