The purpose of the project is to simplify and streamline the process of producing natural-processed coffees, which have been steadily growing in popularity in the specialty coffee world (coffee in Colombia is traditionally washed-process). The philosophy is that coffee quality is determined both by the attention given to how coffee is grown and by how it is processed post-harvest.
