Bar Agricole Seasonal Citrus Gins - Hashiri, Shun, Nagori In Japan, seasonality has guided cuisine and aesthetics for over a thousand years. By the Heian period (794–1185), poets and chefs celebrated ingredients at their shun, the fleeting moment of perfect ripeness. From this aesthetic evolved Kaiseki cuisine in which each dish is a meditation on seasonality. This limited release of gins by Bar Agricole honors this idea, harvesting California citrus at three distinct points in the 2024–25 growing season and beginning maceration for each within 24 hours in biodynamic grower-producer grape spirit.
