Norwegian engineer Tolleff Bache Mönniche, designer of the Panama Canal’s auxiliary locks, established the farm and built Panama’s first gravity-fed plantation, inventing a patented “siphon” sorting device still used today. This Lot #6 from Finca Lérida was grown at 1,700m in Boquete’s Alto Quiel region. Ripe cherries were selected through flotation and sealed for 48 hours of anaerobic fermentation. After depulping, the coffee was slow-dried in a cold room for a full month. The result is a sweet, fruit-forward cup with the layered richness that defines Lérida’s unique terroir. Fun fact: Finca Lérida has consistently placed in the Best of Panama competition, including a 1st place win in 2019 in the Washed Gesha category.
