Cranberry-Pecan Bark, 3 Bars

Our cranberry-pecan Bark Bar is a delicious blend of tart fruit, buttery pecans and caramelized chocolate. We small-batch caramelize in our kitchen, balancing temperature, time, cacao butter and cane sugar to produce a taste that is both singular and indulgent. We roast our own pecans, to release the buttery flavors, and  then we fold in the roasted pecans with dried cranberries for a complex, balanced treat. During customer tastings at food shows, this is one of the top "thumbs-up" creations.
