Blue fenugreek seed (Trigonella caerulea) powder is ground seed that grows wild in the mountainous northern Georgia, have rich, nutty,warm flavor and less bitter and astringent than regular Indian fenugreek. It add earthy and mildly spicy flavor to a variety of Georgian fish, meat, poultry or vegetable dishes, soups, borscht, gravy, stews. Mostly used in "Satsivi" & "Bazhe," a signature Georgian dishes.
