Red Currant Jelly

We buy red currants from a farming neighbor when they're at their peak of ripeness. We press the juice out of these beautiful berries, mix with sugar and cook until they're just right. Currants have a high pectin content all on their own, so there's no need to add any. This jelly has two ingredients: currant juice and cane sugar.  This jelly is divine on a thick piece of sourdough toast with butter smeared beneath. It's a fabulous way to start your day!
