Produced by a dedicated husband-and-wife team, Alla and Rus, their farm has been carefully rehabilitated over several years, with ongoing attention to pruning, tree health, and the demands of a tropical landscape.Lempira is a brand-new coffee variety for Big Island coffees. Developed in response to the recent arrival of Coffee Leaf Rust in Hawai‘i, this rust-resistant variety represents a proactive step toward long-term farm resilience.Over the past three years, Alla and Rus have conducted fermentation trials using yeast inoculation to understand the variety’s potential. The current approach—a five-day fermentation shaped by cool conditions at elevation—is monitored through pH and temperature.The result has been remarkably expressive, offering a glimpse into the future of rust-resistant coffees in Hawai‘i.
