Lemon Cookie Cashew Butter

2023 NC Specialty Food Association Award Winner (1st Place – Pantry)   Non-GMO, Gluten Free, Soy Free, Palm Oil Free, No Refined Sugar, Fair Labor Cashews, Vegan  When we released this nut butter as a seasonal Limited Batch, the response was so overwhelmingly positive, we knew we needed to add this cult favorite to our year-round selection. This enchantingly bright nut butter is like spreadable lemon coconut cookies in a jar, hence the name change from “Lemon Coconut” to Lemon Cookie in March 2024.   Organic cashews, real lemon, Organic coconut nectar, and flaky Jacobsen sea salt combine with the crispy texture of house-toasted coconut to make an out-of-this-world burst of sweet sunshine. We love it mixed into yogurt bowls, atop toast with fresh fruit, or as a substitute for peanut butter in homemade cookies.
