Fourth generation, certified master cheese maker Sid Cook makes this American original.  It is a goat's milk cheese from grass fed goats from only eight small farms within 20 miles of the Carr Valley creamery.  With a rind  rubbed in cocoa, the cheese is semi-firm and the flavor has notes of fruit and caramel.
