Origin: Region -  Guji Process: Washed Variety: Heirloom Sourced by: Trabocca Last year a group of my close coffee friends and roaster buddies told me about a coffee from the Bishan Dimo washing station that tasted like mangos and perfectly ripe peaches. For them, it was undoubtedly one of the best coffees of the year. Sadly (as is the case with most insaneo coffees), the lot sold out almost instantly. This year, however, I was determined to explore all Bishan Dimo had to offer. In Ethiopia, coffees from Guji are unmistakably my favorite. While other Ethiopian coffees may offer delicate profiles with distinct florality and citrusy flavors, coffees from Guji always seem to hit differently with big stonefruit and berry profiles in the cup. Admittedly, the first time I cupped this coffee was with a bit of the Covid sniffles. I was having massive problems with all coffees generally tasting brown and muddled.
