This cut corresponds to the lower back, beginning at the sixth and last lumbar vertebra and including the hip bone. It’s less tender than the loin, but fattier and more flavorful. This cut is readily available, affordable, and tender enough for quick, high-heat cooking like grilling or pan searing. Please note that all our steaks are cut by hand and may vary slightly in weight.
