Watermelon radish, also known as Red Meat, hides its shock of magenta flesh under pale green skin—mildly sweet with just a hint of heat. Slice to reveal the color and use raw for salads, quick pickles, or sushi plates. A Chinese heirloom (Shinrimei), it prefers the cool of fall and stores well. Sow in late summer, thin for size, and keep beds moist.
