Botanical Name: Manihot utilissima Pohl.Suggested Uses: Soak the pearls before using by covering with water for about 2 hours; drain. 4 Tbsp of soaked pearl tapioca is equal to 1 1/2 Tbsp of instant, "minute" tapioca.Origin: BrazilProcessing Notes: Tapioca pearls are made from the starch or flour that is obtained by grinding the tubers of the Cassava plant, Manihot utilissima (also known as Manihot esculenta). After grinding, a slurry is created, and then centrifuged, to separate the starch from the water and plant juices. The moist starch is placed in vats and centrifuged a second time to remove moisture. Because it is essential that no moisture remain, the starch is transferred into drying ovens in a final attempt to eliminate all traces of dampness. When all stages of the drying process are complete, the starch is placed in a tumbling machine.
