Unlike other fruit-infused vinegars, this one is not simply banana-flavored vinegar, but rather uses fermented platano machos, a type of bananas that falls somewhere between a regular banana and a plantain. The result is a delightfully fruity flavor that is distinctly banana, but not overly sweet.
