High West Distillery was founded in 2006 by David Perkins and his wife, Jane. In 2015, High West opened a new bigger distillery high in the Wasatch-Uinta mountains in Wanship, Utah. Spicy, with a classic flavor profile and good for just about any rye cocktail. On the nose, notes of mint, baking spices, pine nuts and dark chocolate. Rye spices upfront on the palate, eucalyptus, herbal tea with wildflower honey and all spice.
