2022 Agnes Paquet Le Clou et la Plume Bourgogne Aligote
From: Burgundy, FranceVarietal: Aligote Taste: Paquet's Bourgogne Aligoté blends the characteristics of both terroirs, revealing structure and elegance at the same time. Opulent citrus meets a light note of stone & just-ripened orchard fruits; they’re wrapped up in a flinty minerality that firms and lifts on the finish. Extremely pretty & a great example of the varietal. Pairing: Because this wine shows off mineral flavors and palate-cleansing acidity (not unlike Chablis), it’s an extremely versatile food partner, pairing well with salty, fatty, slightly spicy, creamy, buttery, and fresh flavors. This wine would be excellent with an array of fresh vegetables, salads, and of course, shellfish or seafood of any kind (raw cold water oysters to shrimp scampi to grilled salmon or grouper). Soft cow’s milk cheeses, fresh goats milk cheese, fried anything, you get the idea. With fried food on the mind, we’re sharing Sue Li’s Taiwanese Popcorn Chicken with Fried Basil recipe for a part
