Translucent and yet deceptive in its richness the Oeil de Perdrix has a lot going on. Orange peel spice rose petal and sweet red cherry fruit are all nicely lifted. Oeil de Perdrix is a beautiful expressive Champagne but it only truly blossoms with a few hours of air. The zero dosage style is especially felt on the clean bracing finish. Bottled with no dosage.
