DESCRIPTION This orange, cannonball-shaped cheese was briefly banned by the FDA for a completely illogical argument.  Today a version is imported into the States from Normandy that is close to the real cheese.  Invented by the French originally as a substitute for Edam, it was infused with a natural orange dye so as to stand out.  Mimolette is unique for its color and is good as both a table or an ingredient in a cooked or melted dish.  To learn more about this cheese click here!   ORIGIN France   MILK TYPE Cow   RAW MILK OR PASTEURIZED? Pasteurized   STORAGE TIPS Refrigerate preferably in its own drawer close to where most of the produce is kept.  After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life.  While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.   PEOPLE WHO PURCHASED THIS ALSO PURCHASED Cheese Plate By Cheese Type - Ossau Ira
