Tasting Notes Peach Colada, Pink Lemonade, Sour Strawberry, Almond Joy Mouthfeel Textured & Complex General Info Region: Colombia, Santa Monica Variety: Castillo Altitude: 1500 MT Process: Co-Ferment About the Coffee This coffee was grown by Jairo Arcila at the farm Santa Mónica. Thiscoffee was exposed to a dry anaerobic fermentation period of 72 hourswith the pulp on. During this fermentation stage peaches, coconut andwine yeast were added. The cherries were then pulped and placed todry on raised beds with peaches placed amongst the coffee until theideal moisture content was achieved.This microlot is 100% Castillo. This variety was developed byFederación Nacional de Cafeteros. It is more productive than Caturraand resistant to coffee leaf rust.
