This organic coffee takes its name from the hallmark bluish hue of its beans, created by the traditional Indonesian wet-hulling method known as Giling Basah. In this process, the parchment layer is removed while the beans still retain a high moisture content. Balinese farmers continue to follow a traditional rural lifestyle centered on the Subak Abian, a community-based system of ecologically sustainable irrigation that has been in practice for more than 1,000 years.
