We purchase small amounts of ones that we find unique and interesting, and we roast them until they're sold out. Once they're gone, they're gone. What is nitro fermentation? After the coffee is picked and depulped, the beans are placed in a tank, introduced to fruit and starter cultures (like yeast and bacteria), and infused with nitrogen. The idea is that, in an oxygen-free environment, microbial activity can be precisely controlled, and the result is coffees that are vibrant with prominent fruit character. We gets lots of candy-like fruity notes in this one: blueberry, watermelon and lemon-lime.
