The grapes are hand-harvested, destemmed, and fermented in stainless steel using native yeasts. The juice stays with the skins for a short period and then is bottled unfined, unfiltered with zero sulfur. Lightly sparkling with a splash of acidity. Peppery spice and richer red fruits prevail on the palate, with a grippy and savory finish.
