How It Works The hydrophobic portion of the soap molecule will bond to the grease or oil, while the hydrophilic portion will bond to the water. This divides the oil into smaller drops, which are then held in suspension in the water by the soap molecules. As a result, these drops can be easily washed off the surface of your items.
