We honor those old days when good, home cooked food was always waiting at the end of the trail, at the finish of the day.  Our rich and hearty beef barley soup is named after a buckin' horse named Board.  He saves the day and you will too when you dish up this soup to hungry diners. A favorite of men in particular and cowgirls (like us!) with hearty appetites! The name of the Buckboard started with a horse named Board. No one stayed on Board when he bucked! Young cowboys tried their rodeo talents on Board as their friends along the corral gleefully called out “buck, Board, buck"! Board was ornery and he sure wasn't happy. One day a young fool cowboy hooked Board up to the wagon by mistake and sent the cowgirls off to town.     The ranch was in a panic knowing what could go wrong. Turned out... Board loved the cowgirls and he loved pulling their wagon! He became the chosen steed to take all the cowgirls on their travels. Everyone from then on called the wagon the Buckboard transport and it stuck. Enjoy this soup in honor of old Board." Recipe Instructions for Beef Barley Soup ~ so simple to make! Buckboard Barley Soup What you need to make the soup4 oz  of good wine for the cook!   1   small onion chopped (about 1 cup)1 lb  lean hamburger2   carrots – chopped—we like them cut in circles like wagon wheels!2   stalks celery – chopped in med, to small pieces    28 oz can of diced tomatoes3/4  cup pearled barley, rinsed in a sieve4  cups water  Our Herb/spice packet (The special part of the whole thing!)Just how you make the soup:              Pour wine in a nice glass and slowly sip as you proceed…       In a 4 qt. soup kettle, sauté chopped onion & hamburger until onion is translucent and pink is gone from hamburger...5 min.     Add carrots and celery and stir around 3 minutes.   Add the can of tomatoes, barley and water  Dump in that special seasoning packet and stir the whole thing up a bit.   Bring to a boil then turn down and simmer covered for 45 min. or until barley and veggies are tender. Stir occasionally to avoid scorching anything!        Scoop up a spoonful and sample so you can add salt and pepper to taste. We keep the salt content low so you can add it to your liking.As soup cools it can thicken – thin with water or beef broth or consider it stew or a casserole! This soup also freezes well!ENJOY!
