About Hermanos Cordova About 6 years ago, Juan Vasquez and Juan Carlos Vasquez began a small family operation consisting of a coffee processing and drying station. At first they were only drying about 55 pounds of coffee cherry on tarps in direct sunlight. Realizing that this wasn’t producing the quality they knew they were capable of, they built artisanal drying structures using environmentally friendly materials. Now they process over 80,000 pounds of coffee for a handful of small farms in the area.  When they receive a lot from an already-vetted producer, the crop goes through a filter and floatation process to remove defects and imperfect beans. To reduce the amount of water used and wastewater created (which can contaminate soil and nearby water sources), many of the coffees processed here are naturals, which don’t use much water, if any! This particular lot is also anaerobically fermented before drying. Looking towards the future, their goal is to create a coffee development lab
