About Palma Rosa Victor Chala has been around coffee his entire life; his parents were also coffee producers, selling coffee to their local co-op. At just 24 years old, he took a leap of faith and purchased a coffee farm of his own because he saw a future in growing coffee for the specialty market. Now, 14 years later, he has built Palma Rosa into a farm that produces fantastic coffee. Victor employs a special and interesting process to his coffees. After harvesting only the ripest cherries, he depulps them and places them in sealed containers. Now begins a mixed fermentation with yeast for anywhere from 65-80 hours before the coffee is fully washed then dried on raised beds. The yeast-inoculated fermentation brings some electric, deeply juicy & creamy characteristics to the final cup, akin to juicy peach rings and cream.
