
2019 Cabernet Sauvignon
Cabernet Sauvignon is originally from Bordeaux, France, and also widely used in Ribera del Duero in Spain. Cabernet Sauvignon is celebrated for its bold structure, dark fruit, and age-worthy character. In Paso Robles' Estrella District, the warm climate and well-drained soils allow this varietal to develop concentrated flavors and firm tannins while retaining balance and complexity. Our 2019 Cabernet Sauvignon, sourced from Plummer Vineyard in the rolling hills of the Estrella River Valley, opens with aromas of blackberry, cassis, and dried herbs, layered with notes of graphite and cedar. Aged for 24 months in 25% new, 50% once-used, and 25% twice-used French oak barrels, this wine is full-bodied and richly textured, with a long, savory finish. Pairs perfectly with prime rib, smoked brisket, or aged cheddar. Only 96 cases produced.
