When I lived in Texas, brisket was everywhere.  And, it was delicious.  It's great for barbecues, stews, and sandwiches.  It is one of the best cuts of beef for slow-cooking barbecue.  It's from the breast section beneath the first 5 ribs.  If you want to take it to the next level - make your own pastrami!  Just ask for Judd's fav recipe.
