Also know as the rump cap or the top sirloin cap, Picanha has a thick and fat cap on top.  This cut is very popular with Brazilian barbecues and has a fantastic taste - the fat melts into the steak making it moist and flavorful.  If she had it her way, Regina would always choose a Picanha over a Tri Tip any day.
