The cacao grown and used for this chocolate bar is what they call a "Criollo Rosado", referring to the light colored, more pink color of the interior of the cacao beans freshly sliced open, not yet fermented. After the pods are harvested from the trees, split open, and the beans and pulp inside are scooped into wooden boxes lined with banana leaves to ferment.
