Le Tronçais Barrel Aged Bar  We aged this Mexican cacao in French Oak barrels from Revolution Brewing that previously aged their D.B.X.O.D. Le Tronçais, infusing the raw cacao beans with the unique characteristics of the beer and the wood itself. We sourced this cacao from the Broca Family near Cunduacan, Tabasco in Mexico. These pods from the cacao trees are split open to remove the beans and mucilage from the inside, which is loaded into large wooden boxes to ferment and is turned every day or two over the course of 6-7 days.
