100% direct pressed Grillo from the Palermo region of Sicily. The grapes are picked a bit earlier to preserve acidity and freshness. Winemaker Alessandro Viola believes that "in wine there are a number of perfect chemical balance, only nature can come to that. Who are we to make best of nature?" - and strives to create that balance across all wines produced on the Viola estate.
