Creole Cajun Spice Cresto de Gallo

Cresto de Gallo pasta takes its inspiration from the cockscomb, the red thing on top of their heads, of the Leghorn rooster. The leghorn is an Italian breed of rooster and has one of the largest combs of all chickens! (They also lay some of the best eggs and survive our Texas summers extraordinarily well!)  The shape itself makes a fantastic alternative to the plain and simple macaroni. This is like macaroni with a 80’s punk-rock mohawk. You can make plain mac & cheese with it or you can spice it up! Add some red pepper flakes to your mac for a unbelievably warming and comforting dish.
