Introducing the Downeast Coffee Roasters Lab Series, designed to spark curiosity and deepen appreciation for innovation in coffee. The first ever release in the Lab Series is our Passion Project, a perfect introduction to this new line focused on innovation. The focus of this coffee is an anaerobic honey passion fruit co-ferment grown across three Colombian regions and processed at El Vergel Estates. It undergoes a 24-hour cherry fermentation and a five-day anaerobic co-fermentation with yeast and passion fruit to build sweetness and complexity. After ten days of mechanical drying and stabilization in GrainPro bags, it delivers a vibrant cup with notes of passion fruit, pomegranate, citrus, and brown sugar that highlight Colombia’s innovative processing and rich terroir.
