Exclusive contract farm product from Brazil Cerrado Shimada Plantation  Since 2003, I have been making trips to Brazil in the search of outstanding coffee beans. Every year, from many different coffee-producing areas, I have been focusing on and tasting the very best coffee offered by the Cerrado coffee-producing areas that spread out from the Patrocínio municipality in the state of Minas Gerais. Since 2018, we have been in a contractual agreement with the Shimada Farm, owned and managed by Hugo Shimada, who is a third generation Japanese American coffee producer. His grandparents had emigrated from Hokkaido to Brazil before the war. To retain the inherent flavors and taste of the coffee beans, the coffee is processed using the natural process instead of the washed process. In the natural process, the coffee beans are not de-pulped and stored in the refrigerator and aged in the cherry form.
