Every year, from many different coffee-producing areas, I have been focusing on and tasting the very best coffee offered by the Cerrado coffee-producing areas that spread out from the Patrocínio municipality in the state of Minas Gerais. Since 2018, we have been in a contractual agreement with the Shimada Farm, owned and managed by Hugo Shimada, who is a third generation Japanese American coffee producer. To retain the inherent flavors and taste of the coffee beans, the coffee is processed using the natural process instead of the washed process.
