Nozomi - Covered Kabusecha Green Tea
Nozomi is kabuse-cha, which means "Covered Green Tea" in English as it is shaded (covered) by a special net to block sunlight for a few days before a new sprout emerges much like gyokuro, but for a shorter duration—typically about 7 to 10 days, compared to gyokuro's 20 to 30 days of shading. This shorter shading period allows the leaves to develop a balance of flavors, resulting in a tea that is less intense and more affordable than gyokuro. Farmers increase the chlorophyll content by shading the leaves and reducing bitterness, giving kabusecha a mild, slightly sweet taste with a touch of umami.
